Sometimes you just NEED a cookie!  I whipped these chocolate chip cookies up the other night and it’s hard not to eat them all.  I keep them in the freezer out of sight, and in a hard to open container so I really have to work at getting to them. Ha!  An added bonus is that my girls turn their noses up to these since there are coconut flakes and nuts in them. Sooooo bottom line more for me!! 🙌🏽 I’m such a good mom.  

Paleo Chocolate Chip Cookies

2 & 1/2cup almond flour

1 tsp baking soda

1/2 tsp salt

2 eggs

1/4 cup honey or less even 

2 tsp vanilla

Scant 1/4 cup coconut oil, melted 

1/2 cup  mini dark chocolate chips 

1/2 cup shredded unsweetened coconut 

1/2 cup chopped nuts (pecans, sliced almond, cashews or macadamia nuts are good nuts to use) 

Preheat oven to 350 degrees and line a cookie sheet with parchment paper bake for 11-14 min…Mix wet ingredients then add dry and continue mixing.  Add chocolate chips, nuts and coconut last.  

**I think adding about a 1/2 cup oats, 1 tsp of cinnamon, and a half cup of raisins would totally work if you wanted more of a oatmeal raisin cookie.  (Just leave out chocolate chips, coconuts and nuts)
